The world´s only vegetable fat which can be consumed without having to be chemically processed.
In the Organoleptic pilgrimage, there is a sublime moment, where a thousand different fruits concentrate together to offer their scent within an Arbequina olive, rendering tribute to the Mediterranean´s main character.
We only grow the Arbequina variety. The produce is a mild oil of enormous fruit and floral intensity. We look for freshness and the fruit from the Mediterranean Arbequina.
The growing system follows the Integrated Production Scheme, which respects the native flora and fauna. It uses the least possible chemical fertilizers.
Every week, when the fruit starts to ripen, we grind a small quantity of olives to ensure, through tasting, the oil´s quality.
Oil like Son Parera´s demands that all olives be obtained from the tree without a single one touching the ground.
From the harvest to the grinding process our sacred rule is that under no circumstances should there be any delays. In the space of two hours we achieve, at the precise moment, the oil from the olive that hung from the tree.
We use 8 kg of olives to obtain 1 litre of oil, whereas in a normal situation 4.5 kg would be sufficient. All this waste multiplies the quality, the fruit and the freshness. A fresh fruit juice at its ripest.
